Grilled Swordfish with Anchovy Parsley Sauce (Served with Amore Four Cheese Ravioli)

The anchovy flavor paired with the ravioli is so inviting, not too strong, and perfectly complements the swordfish.

  1. In a blender, combine the shallot, Amore Anchovy Paste, vinegar, lemon juice, parmesan, ½ tsp salt, and ¼ tsp pepper. Blend to form a paste, and while blending, add ½ cup olive oil in a thin stream and then add the hot water. Set aside.
  2. Heat a skillet or grill. Coat the swordfish with 1 tsp olive oil and sprinkle with remaining salt and pepper. Cook the fish for 4 minutes, turn and cook until golden brown; about 4 to 5 minutes longer.
  3. Heat 4-6 quarts of water to a boil. Add 1 tbsp olive oil and salt to taste. Add Amore Four Cheese Ravioli, reduce heat and boil gently for 4-6 minutes, stirring occasionally; drain, retaining ½ cup pasta water. Toss with the sauce and swordfish, adding the reserved water if needed. Top with parsley and serve immediately alongside the swordfish.
