Preheat oven to 425 degrees F. Line a baking sheet with parchment paper. Cut bread into 1” slices.
Toss with olive oil and salt. Transfer to baking sheet.
Grill bread until golden brown. Let cool, cut into 1” cubes.
Cut and season zucchini with salt, pepper and olive oil, then grill for about 2 minutes on each side.
In a glass jar, combine all ingredients for dressing. Put lid on jar and shake until fully incorporated.
In a large bowl, lettuce, zucchini, Amore Sun-Dried Tomatoes and Amore Grilled Peppers. Pour dressing over ingredients and toss with bread cubes to combine.
Let sit for 10-20 minutes before serving. Garnish with fresh basil.
