In a medium bowl, soak onions for 15 minutes. Drain onions and reserve vinegar for dressing.
Meanwhile, take a large serving platter, add romaine. Top with rows of Amore Garbanzo Beans, Grilled Peppers, Cannellini Beans, Artichoke Hearts, onions and mushrooms.
In the medium bowl or screw-top jar, wish together reserved vinegar, olive oil, cheese, oregano, salt and pepper. Drizzle dressing on salad to lightly coat.
