  1. In a large slow cooker*, combine the garbanzo beans, carrots, sweet potatoes, tomatoes, and onions.
  2. Stir together the Amore Tomato and Garlic Pastes, the salt, pepper and water.
  3. Pour the mixture into the slow cooker. Cover and cook on low for 7 to 8 hours.
  4. About 10 minutes before serving, stir in the spinach. Serve hot sprinkled with the cheese.
  5. *To cook on the stove top, combine the ingredients except for the spinach and cheese in a large pot. Cover and cook, stirring occasionally, on low heat 1-1/2 hours or until the carrots and potatoes are tender. Add more water if needed. Add the spinach and cook 5 minutes more. Serve with parmesan cheese.
