In a large skillet with sides, heat olive oil over medium heat
Add diced onion and saute for 2-3 minutes, adding a generous pinch of salt
Stir in Amore Garlic and Tomato Cooking Pastes until combined
Stir in vegetable broth and bring to a low boil
Add in mini farfalle, and cook to al dente, approximately 6-7 minutes
After about 3-4 minutes, stir in Amore Sun-Dried Tomatoes and Artichokes
Don’t forget to taste test and add more S&P!
Stir the mozzarella balls and spinach into the pasta until cheese is slightly melted and spinach wilted
Garnish with fresh parm and enjoy!
