Sun-Dried Tomato and Artichoke Pasta

Ingredients
- 2 tbsp extra virgin olive oil
- 1 cup yellow onion diced
- 1 1/2 tbsp Amore Garlic Paste
- 1 tbsp Amore Tomato Paste
- 4 cup vegetable broth
- 1 lb mini farfalle pasta
- 1 packet Amore Sun-Dried Tomatoes , julienned
- 1 packet Amore Artichoke Hearts , chopped
- 4 oz mini Mozzerella cheese pearls
- 1 cup fresh spinach leaves

Instructions
- In a large skillet with sides, heat olive oil over medium heat
- Add diced onion and saute for 2-3 minutes, adding a generous pinch of salt
- Stir in Amore Garlic and Tomato Cooking Pastes until combined
- Stir in vegetable broth and bring to a low boil
- Add in mini farfalle, and cook to al dente, approximately 6-7 minutes
- After about 3-4 minutes, stir in Amore Sun-Dried Tomatoes and Artichokes
- Don’t forget to taste test and add more S&P!
- Stir the mozzarella balls and spinach into the pasta until cheese is slightly melted and spinach wilted
- Garnish with fresh parm and enjoy!
