Sun-Dried Tomato and Artichoke Pasta
Sun-Dried Tomato and Artichoke Pasta
  1. In a large skillet with sides, heat olive oil over medium heat
  2. Add diced onion and saute for 2-3 minutes, adding a generous pinch of salt
  3. Stir in Amore Garlic and Tomato Cooking Pastes until combined
  4. Stir in vegetable broth and bring to a low boil
  5. Add in mini farfalle, and cook to al dente, approximately 6-7 minutes
  6. After about 3-4 minutes, stir in Amore Sun-Dried Tomatoes and Artichokes
  7. Don’t forget to taste test and add more S&P!
  8. Stir the mozzarella balls and spinach into the pasta until cheese is slightly melted and spinach wilted
  9. Garnish with fresh parm and enjoy!
