Sun-Dried Tomato Ricotta Crostinis

Ingredients
- 5 half inch sliced roasted squash wheels
- 1/3 cup ricotta (or make your own!)
- 1/4 cup sun-dried tomatoes
- 2 tsp Amore Sun-Dried Tomato Paste
- 1/4 cup fresh basil
- 1 tbsp Amore Garlic Paste
- salt , to taste
- pepper , to taste

Instructions
- Preheat oven to 350 degrees F.
- Cut squash into 5 1/2 inch slices. Roast for 10-12 minutes. Take out and let cool.
- Layer ricotta on roasted squash wheels.
- Blend sun-dried tomatoes,Amore® Sun-Dried Tomato Paste, fresh basil, Amore® Garlic Paste, salt and pepper to create a tomato chutney (pulse for chunkier texture) and scoop on top of ricotta.
