Heat 4-6 quarts of water to a boil. Add 1 tbsp olive oil and salt to taste. Add Amore Pesto Ricotta Tortellini, reduce heat and boil gently for 5-7 minutes, stirring occasionally; drain, toss with 2 tbsp of olive oil and allow to cool to room temperature. In a mixing bowl, combine Amore Sun-Dried Tomatoes, Amore Garlic Paste, shallots, lemon juice, and remaining olive oil, season with salt and pepper. Toss the cooled pasta with dressing mixture and add spinach. Sprinkle with grated parmesan and serve cold.
