Turn turkey leftovers into this satisfying salad by tossing them with mozzarella, roasted peppers and green olives. Serve it with one or both of our Amore dressings so that everyone can choose their favorite: sweet and mellow Tomato and Pesto, or Spicy Anchovy Garlic. Any leftover dressing keeps well in the refrigerator for up to one week.
Ingredients
- 4 cups cooked turkey, cut into bite size pieces
- 1 cup mozzarella cheese, diced
- 1 cup roasted peppers, cut into thin strips
- 1/2 cup pitted green olives or sun-dried tomatoes, sliced
- 3 cups baby lettuce

1 tsp Amore Pesto Paste
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- salt and pepper, freshly ground

- 1/2 tsp Amore Chili Pepper Paste
- 1 tbsp white wine vinegar
- 1/4 cup olive oil

Amore Tomato Pesto Dressing
Amore Spicy Anchovy Garlic Dressing
INSTRUCTIONS
- Place all the ingredients for the Amore Tomato Pesto Dressing in a small jar and shake well. Place all the ingredients for the Amore Spicy Anchovy Dressing in another jar and shake well.
- In a bowl, toss together the turkey, mozzarella, peppers, and olives. Arrange the lettuce on a platter. Top with the turkey mixture. Serve the salad with the two dressings.
