A classic, hearty Italian sauce that can be served for all occasions. Traditionally simmered for a long time, this recipe combines several AMORE® pastes into a robust dish that can be cooked in less than half an hour.
3 tbsp olive oil
1 med onion , finely chopped
2 med carrots , finely chopped
1 celery rib, finely chopped
1/2 lb ground veal
1/2 lb ground beef chuck
salt and pepper, freshly ground
1 4.5-oz tube Amore Tomato Paste
2 tbsp Amore Garlic Paste
2 cups chicken broth
1 cup water
1 tsp Amore Herb Paste
1 1/2 tsp Amore Sun-Dried Tomato Paste, to taste
1/3 cup heavy cream
1 lb fettuccine pasta or other pasta
1/2 cup grated parmesan cheese
In a large saucepan, warm the oil over medium heat. Add the onion, carrots and celery, and cook, stirring occasionally, until tender, about 10 minutes. Add the veal and beef chuck and cook, stirring often to break up the lumps, until the juices evaporate, and the meat is lightly browned. Drain excess liquid and add salt and freshly ground pepper to taste.
Stir in the Amore Tomato and Garlic Pastes. Add the broth and water. Bring the sauce to a simmer and cook 15 minutes or until slightly thickened. Add a little more water if the sauce is too thick. Stir in the Amore Herb and Sun-Dried Tomato Pastes and cream.
While the sauce is cooking, bring a large pot of water to boiling. Add the pasta and salt to taste. Cook, stirring frequently, until the pasta is al dente, tender yet firm to the bite.
Drain and toss the pasta with the parmesan cheese. Serve hot.
