Typically served on Christmas Eve in Naples, this easy pasta is sure to become a favorite.
1/2 cup parsley, chopped
1 cup walnuts, toasted and finely chopped
1/3 cup raisins, chopped
black pepper, freshly ground
Pour the oil into a skillet large enough to hold the pasta. Add the Amore Garlic Paste and parsley and cook over medium heat 3 to 4 minutes stirring often. Stir in the walnuts, raisins and a pinch of salt.
Bring at least 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta. Stir well. Cook over high heat, stirring frequently, until the pasta is tender yet still firm to the bite.
Drain the pasta, reserving some of the cooking water. Toss the pasta with the sauce in the skillet and just enough of the cooking water to keep it moist. Add a generous grinding of black pepper. Serve immediately.
