Whether you like it thin enough to eat with a spoon or thick enough to require a fork, pasta and beans, or pasta fazool, is the ultimate comfort food. It makes a perfect meatless meal.
- 1/4 cup olive oil
- 1 celery rib, chopped
- 1 med carrots , chopped
- 1 tbsp Amore Garlic Paste
1/4 cup Amore Tomato Paste
- 1-1/2 cups water
- salt to taste
- pinch of crushed red pepper
2 16 oz cans cannellini or Great Northern beans, rinsed and drained
8 oz tubetti or ditalini pasta, cooked al dente and drained
- In a large saucepan, heat the olive oil over medium heat. Add the celery and carrot and cook, stirring occasionally, 5 minutes. Stir in the Amore Tomato Paste and Garlic Paste, salt and crushed red pepper. Stir in the beans and mash some of them with the back of a spoon. Add the water and bring it to a simmer. Cook 10 minutes or until thickened.
- Add the cooked pasta and stir well. Add a little hot water if the mixture seems dry. Serve hot.
