Ingredients
- 2 tbsp extra virgin olive oil
- 4 links Italian sausage (about 1 pound), cut in 2 inch chunks
- 1/2 cup red onion
- 3 cloves garlic, minced
- kosher salt, to taste
- 1/2 cup white wine
- 1 cup chicken stock
- 2 tbsp Amore Sun-Dried Tomato Paste
- 1 tsp Amore Anchovy Paste
- 2 lb mussels, scrubbed and beards removed
- Fresh chopped parsley
- Bread or pasta, for serving
INSTRUCTIONS
- Heat the olive oil in a deep sided skillet or pot (6-quart capacity) over medium heat
- Brown the sausage on all sides, and set aside
- Sauté the onion and garlic, seasoning lightly with a touch of salt, until translucent
- Add the wine, chicken stock, tomato paste, anchovy paste and whisk until combined
- Stir in the mussels, cover the pot, and steam for about 5-6 minutes, or until all the mussels have opened
- Discard any unopened mussels
- Garnish with parsley and serve immediately with crusty bread or pasta.
